骨を抜いて薄く叩き伸ばした鶏むね肉を、衣をつけて顔ほどの大きさに揚げる台湾名物。1990年代後半に士林夜市の「豪大大雞排」が広めたとされ、比較的新しい屋台料理ながら、いまや台湾を代表する一品です。胡椒と唐辛子のスパイスをたっぷりまぶして熱々を頬張ります。
A deboned chicken breast pounded thin and fried until it is the size of your face. It is a relatively modern street food, popularized in the late 1990s by Hot-Star (豪大大雞排) in the Shilin Night Market, and now one of Taiwan's most iconic snacks — dusted with pepper and chili and eaten piping hot.
